Technically the most important property of Tylose^® is its capabilty to increase the viscosity of liquids and thus to act as a thickener. The viscosity range of 2% Tylose solutions extends from 5 mPa•s up to over 200,000 mPa•s (Hoeppler). The thickening effect of Tylose depends on

• the degree of polymerization (DP)
• the concentration
• the shear rate
• the temperature
• the concentration of dissolved salts.
